You will learn about why raw eggs are safe to eat in Japan as well as popular Japanese dishes that consist of them. The first dish was "tamagokakegohan" which literally translates to an egg over rice. The second one was a bit of a fancy breakfast with natto (fermented soybeans), green onions, and sesame seeds.

I got salmonella once, don't know how. After the pain I experienced, I will never eat a raw egg.

They say the salmonella is on the shell of the egg. Japan sanitises and clean their eggs with highest quality control and thats why it is safe to eat raw eggs in Japan (before expiry date I guess) I think even South Korea eats raw eggs too. I am neither Japanese nor Korean but I love them too! I thought it would be delicious and decided to try while I was in Japan some years back, boy I was not disappointed! 😋

You could also just poach whole eggs and make something like Onsen Tamago. Or marinade yolks in soy sauce and mirin for couple hours or more, to overnight, for a creamy savory jelly-like yolk.

I mean, I've licked the spoon after mixing in a raw egg with box brownie mix and that's never gotten me sick... but a whole raw egg straight up, I don't think I would eat. Closest you'll get from me is semi-cooked with a slightly runny center but I just don't really like the taste of eggs in general unless it's in a cake recipe

In the US, you can pasteurize them with a sous vide machine. It takes some time, but it makes it safe to eat them raw.

really all that you need to do to safely consume raw eggs is to make sure they're pasteurized. you can buy them already pasteurized or do the process yourself if you have the equipment and know how, but failing that you can just partially cook the egg by soft boiling it. of course soft boiling it makes some recipes not possible but its the safest way if you cant find pasteurized eggs in your area or are incapable of pasteurizing them yourself.

Don’t forget to wash egg shell with something strong (at least with dish soap or soda) before cracking an egg! I’ve heard most of salmonella lives on the shell.

I've had raw egg over rice, sometimes ill mix it in with some instant ramen depending on the ramen or instant korean bbq flavored yakisoba. There are some brands out here in the us i learned my lesson from eating other brands outside of eggland eggs

if the egg are clean in the right way and the chiken are fed with un parasited food, their egg will be safe and edible even if you eat it raw
