EASY 10 MINUTE HIGH PROTEIN PASTA RECIPE (VEGAN)

Hey everyone! Here is an amazing high protein pasta recipe that I've been making a lot recently. I showed it on my instagram and everyone wants the recipe so here it is! You will definitely make again and again. The best part is it is simple to make, easy to digest, and fodmap friendly. I hope you enjoy it.

Easy Vegan Herb Pasta Recipe
Ingredients:
4 cups dried pasta

tempeh stir fry:
1 carrot, peeled and chopped
1/2 block/package of tempeh (enough for 2 servings)
1 red bell pepper, chopped
1 tbsp italian seasoning
2-3 tbsp veggie broth
a handful of cherry tomatoes, chopped
a handful of pitted black olives, chopped
chopped fresh herbs (parsely, basil, cilantro etc)

tahini lemon sauce:
2 tbsp water
1/4 cup runny tahini
the zest of a whole lemon as well as the juice
1 tbsp italian seasoning
1/2 tsp salt and pepper
2 tsp maple syrup
1 tsp balsamic vinegar

Directions:
1. Cook pasta according to directions on the package. Drain when it is done and set aside.
2. In a large saucepan saute together chopped carrot, tempeh, red bell pepper, and italian seasoning with veggie broth. Saute on medium heat for 5- 10 minutes or until veggies are soft. Remove from heat. Add pasta and toss together.
3. Make sauce by blending all ingredients together.
4. Add pasta to a large bowl, garnish with chopped cherry tomatoes, olives, and herbs. Pour sauce on top and enjoy!

I've recently begun making A LOT of vegan high-protein dishes, as they're usually lower cost, and more budget friendly! I moved out to pursue university, so I don't have a lot to work with in terms of my budget towards food! DEFINITELY are gonna try this out!

This salad would probably be great in the summer, too, cold and with some cubed cucumber but, right now in Canadian winter, it’s warm pasta all the way!👏🤩✨

Your cat is so cute. People who don’t like cilantro are mistaken it adds so much flavor to anything. I use it pretty much for every vegetable I cook. It is a game changer. When you get used to it you can’t live without it. Usually you add it at the end with the garlic to maintain the flavor. It just adds tons of flavor no other herb give.

Thanks so much! Bringin this to work. I work in a 24 employee health care office that is predominantly meat/dairy/egg obsessed. Im the only vegan. Love showin em all you can eat like a king doin it plant based. Love seein the look of amazement on their faces and positive comments when I bring stuff like this in. ❤

Looks tremendous! We typically pair red lentil pasta with IKEA plant balls. It's a ridiculous amount of total protein and delicious 🙂
