3 Healthy Meals in 5 Minutes (Vegan/Vegetarian Friendly)

I love food but I can't stand all that time in the kitchen, so the solution is quick meals to get me through the day with snacks and water in-between. Because I know people will ask, no I'm not a strict vegetarian/vegan. Given the option I will always choose vegetarian, but when those options are non-existent or wack, I'll eat seafood and chicken. I'm more about being practical...there's no reason why people should be eating meat and dairy everyday! The impact of heavy consumption of all things including animals has on the planet is insane! Be mindful and make incremental changes. Eat meat and dairy but do you need it everyday? Make sure to share your personal recipes and ideas so we all can get inspired. BANANARAMA SMOOTHIE BOWL
in a blender:
- half a banana
- healthy splash of almond milk
- 1-2 spoons of peanut or almond butter
- 1-3 dates
- 1 spoon of coffee grinds
- 3-6 ice cubes depending on how much milk you use. Ice cubes make it consistent like icecream
- topped with granola
- optional toppings: almonds, shredded coconut, chia seeds

VEGGIE SUSHI BOWL
- white or brown rice
- seaweed, cucumber, carrots, baby spinach, avocado, sliced and arrayed purdy :)
- ginger for taste
- dressing: sesame oil and soy sauce

PESTO PASTA BOWL
To make pesto, use a food processor and add:
- basil
- pine nuts
- salt & pepper
- olive oil

Mix with pasta and toss in veggies of your choice. I used tomatoes, cucumber, and forgot avocado!!! You can use whatever!

i made an "avocado salad"
-celery
-green bell peppers
-broccoli
-carrot shreds
and mushrooms all cut up in a bowl,
and one avocado stirred and mashed into it (stir well)
It tastes amazing with Tony Chachere's Creole spice sprinkled on it

All three look delicious! Lol at "its not a meal if it's not in a bowl" because I always eat breakfast in a mason jar haha!
My 4 most recycled meals ('cause I eat 4 times a day lol): sliced banana or berries with overnight oatmeal(oats soaked in almond milk with cinnamon, vanilla extract and a pinch of salt) for breakfast - 5 min; green super salad (steamed edamame, spinach, chard, kale, cucumber & avocado) for lunch - 10 min; rice or gf noodles in curry coconut soup for early dinner -15 min; and sautéed veggies (frozen vegetable mix) with cashews for late dinner - 7 to10 min. Ugh, now I'm hungry but it's super late...Peppermint tea!

Videos like these make me so happy because they help out vegans like myself AND introduce people to the vegan/vegetarian lifestyle. People watch this and realize "hey, vegans CAN have delicious meals." Believe me, being vegan can sometimes be difficult, but it's so rewarding and with recipes like these, who wouldn't want to try it?

Maya, I always said every time I look at you, you're so healthy and in great shape, you make me want to eat a salad. This is awesome, three great recipes in under 5 minutes, I can so do this. I can't really stand being in the kitchen, I only put up with it when I am hungry, lol. Thanks and Smiles.

that lunch bowl was awesome. thats a really creative idea! these are all great recipes for summer. when its hot out i feel like my appetite disappears and all i want are foods that are refreshing and light, especially that smoothie bowl!
