Quick and Easy Pickled Eggs that store in the fridge for 3-4 months!

10 large size eggs
1/2 cup water
1/2 cup vinegar ( regular white vinegar or apple cider is good)
1/2 cup sugar
1/2 - 1 tsp pickling spice or to taste
1/2 medium onion sliced
1 quart size jar

Put the eggs in a pan with water to cover. Bring to a boil. Turn off heat and cover the pan for 10 minutes. Drain. Pour cold water over the eggs and let stand 10 minutes. (This will make them easier to peel) Peel eggs.
For the brine:
Bring the water to a boil and add sugar. Stir until sugar dissolves. Add vinegar and pickling spice. Bring to boil and turn off heat. Layer eggs and onion in the jar and pour brine over. Seal the jar and store in the fridge for a few days before eating. Stores for 3-4 months.

I was just thinking about pickled eggs yesterday! We just don’t get them here in Australia. I discovered them on a trip to the States many years ago & have made them with various success a few times since. I’ll have to try your recipe : )

Perfect timing, I have been looking for a good pickled egg recipe. Thank you ♥ Is is necessary to let the pickled eggs cool down once they are in the jar before refrigerating them?

My son loves spicy things...do you think I could add some red pepper flakes to your recipe to spice them up? Any clue how much...I was thinking maybe 1/2 teaspoon...what do you think?
