Pickled Red Beet Eggs
Have you ever tried pickled eggs? Game changer, you don't need beet juice but come on, it's beautiful! The eggs are still creamy but now it's a little tangy from the vinegar and sweet from the beets. You can really use it any way you want. I like to snack on it plain but you can add it to a salad, sandwich, toast, etc.
Try it out and let me know what you think!

Ingredients:
- 1/2 cup water
- 1/2 cup vinegar
- 1/4 cup sugar
- beet juice, for can

These are really good. I have used dill pickle juice, bread and butter pickle juice and even a large jar of marinated artichoke juice or oil, that I saved after I emptied the artichokes. Quite delicious after a few weeks.

I feel like you should put the water in the beet juice jar after you pour out the juice, that way you get maximum beet juice.

I hate the taste of beets but I like the color of the eggs. I prefer the eggs pickled in pickled (cucumber) juice.

Why do the recipes all have sugar? I'm trying to low carb. What's the purpose of the sugar? Is it necessary?

I just picked my first batch of eggs. I just used left over pickle juice and topped it off with apple cider vinegar and some spices. Will they really last 4 months?

Looks great. One of my favorite sides ! I have been thinking about making some and I have a you ever switched out a couple of the hard boiled eggs (slice and smashed in the salad) Second, have you tried pickled quail eggs? The BEST! I'm gonna try my potato salad with a couple of the pink (beet juice to add flavor and color pickled eggs) (5-6), If I chose to not mix the quail in, upon taste, I will slice the pickled eggs and lie them on top. Just a thought. I could eat a HUGE bucket full potato salad. I'll let you know how it turns out when I finished. Please, let me know if you try it out.
