Garlic jalapeño pickled eggs

10-12 eggs
1 1/2 cups of vinegar (you can use any kind)
1/2 cup of water
2 tablespoons pickling salt
1 teaspoon of sugar
6 whole cloves
1 jalapeño
Fresh garlic
1 teaspoon mustard seed
2 bay leaves
1 tablespoon pepper corns
1/2 teaspoon coriander

My pickling spice:
• 1 teaspoon mustard seed
• 1 teaspoon coriander
• 1/2 teaspoon dill weed
• 1 tablespoon Aleppo pepper or crushed red pepper
• 2 cloves
• 2 bay leaves
• 2 all spice berries

Notes:
• THIS IS NOT A CANNED RECIPE! Regardless of what you do THIS recipe NEEDS to be in the refrigerator!
• I do not recommend canning eggs
• refrigeration is needed no matter how much vinegar you use! Yes pickling preserves but eggs are different and if not done properly can cause botulism!
• Be safe :)

How to:
Start by boiling your eggs, I boil mine for 12 minutes, no ice bath, no vinegar just boil in water for 12 minutes exactly, let them cool at room temperature and they peel perfectly!

Clean and place them into a mason jar with your spices, jalapeños and garlic!

To a pot, add the vinegar, water, add your salt and sugar, simmer until dissolve about 10 minutes fully!

Cut the heat and let cool just a little!

Pour brine into your mason jar, let cool!

secure with a lid and place in your fridge to marinate for 24 hours or even longer for more flavor!!

FINALLY SOMEONE understands that there is NO LIMIT to garlic. Whenever I'm cooking at my parents place my whole family looks at me like I'm crazy because I DARED to put more than 2 cloves in the whole recipe. If I'm cooking you better believe there's at least half a bulb of garlic in it lol

I save the vinegar from pickled peppers(jalapenos, pepperoncini, etc) add hot sauce, I call them Dragon Eggs. I really like bantam eggs, just pop them in your mouth, yum-yum. Use them in potato salad. Love your recipe.

One time I was making a salad for my sister and I. I was joking around and I told her, "you can never add too much garlic!" Well 10 minutes and 8 cloves of garlic later I was crying and snotting everywhere because of how spicy all that garlic had made my tiny bowl of salad!She was laughing so hard and so was I, through the tears!

I grew up on red beat eggs. I love them so damn much. I didn't know people pickled eggs in other things till I was in my late teens. I gotta try other pickled eggs.
