“Freshly prepared rice is low in resistant starch and has a GI of 78, allowing it to quickly digest and increase post prandial spike. When rice is cooled in the refrigerator for 16-20 hours and mildly reheated before consumption, it retains resistant starch and also dips in GI to 54 allowing a lesser postprandial spike.”

More people could easily check their glucose more often if continuous glucose monitors were less expensive.

People respond quite different. A male friend of mine and I, we made a week long experiment. He plays tennis 2-3 hours a day and has muscles, vs me, a female doing no sports at all. We ate the same food, almost the same portion sizes, and my spikes where always way higher than his. It‘s because of his fast metabolism, muscles and exercise. Take that in mind.

Thank you for teaching that everybody reacts different to some foods. I cannot tell you the people who are trained in nutrition are stuck in believing all food reacts the same in peoples bodies. So test test test! Eliminate the foods that spike your blood sugar or walk/ exercise immediately after eating these foods to use up the excess glucose with your muscles.

Quick tip. If you want your quinoa to taste better cook it in a broth of some kind. Either chicken or vegetable. Really picks up the flavor.

I appreciate you trying out and showing results of different foods etc. FYI, this is what I do before I eat my "favourite", rice!😊
I put my rice to boil and rinse it three times, taking out lots of starch then the 4th time (when it's cooked), I put the rice in a collander and run the hot tap water over till the water runs clear. I wonder then if that brings the carb count down!? Thank you!

That's why in india, or as people say South Asian countries, we eat white rice with other things to get a good balanced diet and also avoid blood sugar spikes.

i was curious about this one, too. I test ocassionally just for fun and never eat just plain carbs alone but quinoa in a mixed meal barely does anything. In fact, I find that most meals don't really send my blood sugar high as long as im eating a balance of veg/protein/fat/comlex carb. Basically think that's what's key. Even a high GI carb, if in a mixed meal, doesn't do too much.
