HEALTHY YOGURT BAKE RECIPE
(makes 4 servings)
Ingredients:
1.5 cups Greek yogurt (375g)
4 eggs
3 tbsp maple syrup or agave
2 tbsp oat flour, or processed rolled oats
1 cup blueberries, fresh or frozen (150g)

NUTRITIONAL INFO (per serving):
190 calories, fat 5.1g, carb 20.3g, protein 16g

Instructions:
Preheat your oven to 340°F (170°C). Grease or line an 8x8 inch (20x20cm) baking dish.

In a large mixing bowl, combine the Greek yogurt, eggs, chosen sweetener (maple syrup or agave), and oat flour. Whisk together until smooth and well incorporated.

Gently fold in the blueberries until evenly distributed throughout the batter.

Pour the mixture into the prepared baking dish.

Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the top is set and golden brown on the edges.

Once baked, remove from the oven and let it cool for 5 minutes before slicing.

Serve warm or at room temperature, and enjoy this delightful and nutritious yogurt bake!

I made an applepie version of this as well. Just replaced the berries with small cubes of apple and added a lot of cinnamon. Worked out well 👌🏻

Helpful tip, if you want to reduce the egg flavor, throw the batter into the fridge for 6 hours before transferring it to your baking pan. Works for most recipes that use mixed eggs.

Made it last night, put in the fridge and just had it cold for breakfast this morning. So delicious! I added some vanilla extract and lemon juice. No eggy taste and definitely doesn’t taste like scrambled eggs. Thank you for the recipe!

I just made this with regular yogurt, vanilla extract, almond extract, a little bit of cinnamon, and rice flour and baked it a tad longer.... It's amazing thank you!!

I substituted cottage cheese for the yogurt, almond flour for the oat flour and used a zero calorie sweetener. I blitzed the cottage cheese in the blender then added all the other ingredients except the blueberries. (I added @ 2 tsp vanilla extract) Added the blueberries at the end and just stirred them in. Baked in a 9” square pan for 45 minutes (wasn’t done at 30 min) It was better cold I think. Made a good breakfast. I’m bleary eyed in the morning and if I have to think about what to make it won’t happen! I like something I can just grab out of the fridge without thinking. 🙃

I'd add vanilla and/or cinnamon to that recipe to avoid the eggy taste that this recipe would probably have without them.

Just made this with 3 tbl spoons of maple syrup instead of agave and it is incredibly. Also topped with about a half teaspoon of cinnamon on top. Wonderful and thank you!

I cycle between keto and low carb. I made this with coconut flour and nutmeg for a fattier version, and then today with rolled oats for my low carb week. Really, really delicious. I added gingerbread spices and Wholesome Yum brown sugar substitute. It was great slightly warm, but also so good when I had some cold with a coffee this afternoon.
