Looking for advice. I'm the size I want to be (6'1" 200lbs)... except I want more muscle and less fat. Not interested in losing weight, but if I increase my training volume but keep the same diet (assuming I get enough protein) I should build muscle and lose fat correct?

Actually I am very surprised you said you can't isolate muscles you absolutely can isolate your muscles and only work out certain portions of your body have you never been to the gym? Tell me how in the world some of these guys have Masive upper body and skinny little legs from the waist down because they do nothing but upper body. What a dumb statement
