Thanks for another great recipe.. will try it this week. To save sometime on the fat piecing, i have a meat tenderiser with tiny spikes... I am going to give that a try.

i've made this a few times, but did not do the vinegar. the first time turned out really well, but the next two times, the skin got crunchy and crispy, but also gummy / chewy in parts. is the skin not drying out enough / completely? the first time i did it, the skin got crispy and seemed to almost slide off the meat, which to me i guess meant that it cooked well through.

I bake for 50 minutes but the salt become black and continue without salt and the skin become black too and not crispy. I use rice vinegar instead of white vinegar. I don’t understand which part is wrong..perhaps anyone can help me
