The filipino method i know doesnt need a dry brine is that you just score the skin then boil it with vinegar, salt and water don't cook it all the way
Because you're gonna cook it again go for medium rare
Then either dry it with a paper towel or air dry it
After that season it with a lil bit of salt again then deep fry
Crispy skin with juicy meat

In Mexico, we deep fry just the skin (the one who looks "bubbly" and white after the oil is poured), it's a common delicacy we call "chicharrón", and while salty and dry, it goes incredibly well in tacos with guacamole.
