Parsley, kale, spinach, dandelion greens, home grown sprouts, lettuce, radish greens, chard, wheat grass...I rotate through these greens every day and haven't been sick in over a decade. Good stuff thank you Dr. Mindy!

I love lacinato kale! It's the only kale, other than baby kale that I like. And my favorite recipe for it is my Ultimate Superfood Salad. Lacinato kale, red cabbage, broccoli florets, grated carrots, red or yellow or orange bell pepper, parsley, sesame seeds, walnuts (if you like them) and avocado to top it off. The dressing for it is avocado oil, lemon juice, whole grain mustard, salt and some pure maple syrup (optional). I can eat this all week!!

Loved this video! Greens saved me from 30 years of digestive problems! My faves are kale, collards, green chard, dandelion greens, cilantro, bok choy, fresh basil, and arugula. In the beginning, in order to tolerate them, I had to throw them with different vegetables, olive oil, and apple cider vinegar into a blender to make a cold vegetable soup. I cut up cubes of avocado on top of the "soup, " and it was delicious. For about a year, it was the only way I could handle the roughage and get those enzymes into me! Another healing food for my gut was raw okra; just cut it up into a salad. The natural slipperiness has a healing element for the inner lining of the intestines, apparently. It gave me peace in my gut almost instantly. I love and appreciate you, Dr. Mindy, so much! Just started reading Fast Like A Girl and am shortening my eating window. Feels enlivening ::))

A favorite greens recipe...kale chips!
In a hugh bowl add clean, washed kale, top with avacado or olive oil and lemon juice and salt to taste. Bake on parchment lined baking tray on 350degree oven for 3- 5 minutes, checking often. We will go through a tray of this stuff in minutes...even the kids love it! You can also use balsamic vinegar in place of the lemon...its amazing!!!

I deliberately water the wild dandelions in my garden so that I can harvest the leaves and flowers daily to add to my salads. I love that you say 'eating window' and 'fasting window'. I now associate eating and fasting with breezy, open windows looking onto wilderness fields.

I have a hard time eating vegetables so I always juice my greens ( when I’m not in a fasted state). Kale, parsley, cilantro, cucumber..I know there is a lot of debate back and forth on whether you should eat them or juice them but I don’t go down that road, it’s a waste of time. I look at it this way: if I don’t like eating vegetables, then juicing is the next best thing. Good health to all and God bless ❤️

I am almost 86 and i think my good health stems from growing up with vegetables our main source of food. Even tho we ate very unhealthy stuff like smoked meats there was always green vegetables cooked and raw on our plates. If i have no salads for a day or two i develop a real craving for them. With loads of raw onion! But i do think if people are not used to greens they should start steam your veggies before you start eating raw stuff, you will get there! ❤

Yes I believe in VARIETY, yes Organic, I even started, well my 29 yr.old son started 2 years ago a small garden, I have lettuce parsley, Coly Greens, Cabbage, Peppers, Cucumber, Onions, Herbs and Tomatoes and because I live in Florida we can have those just about year round and can't forget Pineapples and Mangos ( I know not Keto Friendly)😄 Dr. Mindy those unknown greens look like DANDILIONS GREENS, I use those too but my FAV. is ARUGULAR😁 Thanks for all you do.

YES to the food videos as well as the fasting videos! :) As a California native, I basically can't feel like a meal day is complete until I've had SOME kind of salad ... one of my faves for winter months when we want comfort food but the fresh leafies are not quite as readily available = Brussels Sprouts Ceasar. Has to be made with fresh raw shaved Brussels Sprouts & homemade Ceasar - the ANTI-Vegan kind (sorry V-Team!) with raw egg yolk, smashed anchovies & parmesan cheese.

My latest added vegetable is radish . Greens are my go to for lazy cooking. A large plate of slow cooked greens really is normal for me. The last one was collard greens my favorite, cooked with olive oil, onions, garlic, red pepper flakes, salt and pepper. Yum

I have Chinese heritage and videos like these make me realise how healthy and smart Asian home cooking is. Grew up eating lots of greens, lots of vegetables in general. There’s also such a huge variety of fermented foods. I don’t mind sauerkraut, but I struggle to eat it every day. However, I am all too happy to eat Chinese pickles, there are so many types, as well as fermented tofu, fermented greens, various sauces, yum!!

Hi Mindy, recently discovered you. I am on a mission to cure my diabetes and a lot of other medical issues that have been plagueing me for many years. I really appreciate your food videos as I have not yet started fasting, learning a lot so I can setup my body properly before I start fasting. within the next week. I make a vegetable smoothie four or five times a week I use 3-4 green vegetables, lemons and a tablespoon of ACV DELICIOUS!

I live in mumbai India and we have a lot of green vegetables that are grown locally in different seasons and it’s so delicious to just cook it in a little garlic. I love green vegetables and all vegetables. Monika Bhattacharyya
