Very useful! I put garlic in everything. Can't say I do it for the health benefits, just cause it makes everything taste delicious ^^

Hey Doc. Thanks for taking the time to make this video. Would be brilliant to get a deep dive about oxalates, someone mentioned it in a post below as well. I eat a load of what you mention, have a massive pot of split peas, spinach, garlic and onions to eat over the next few days :) however, I drink a load of black tea as well over the day so calcium absorption is a concern. Thanks!

I've been avoiding spinach because they're so high in oxalates. I don't have issues with kidney stones but I worry about calcium absorption on a diet so very high in oxalates. I don't count oxalates religiously or anything but with spinach being such a huge outlier, I've opted for kale or collards instead even though I like spinach more. Is eating spinach every day ever concerning in this regard?

Spinach, garlic, onions, Brussels sprouts, cabbage -- those all sound good. I’m not a doctor or a nutritionist, but from the information I’ve gathered, one of the most important factors seems to be getting a diversity of unprocessed vegetables. According to the American Gut Project, for gut microbiome health, the goal should be 30+ different fruit and vegetables per week. Are there any studies looking at the diversity of plants people consume and some kind of health outcomes? An extreme example would be someone who eats only spinach, garlic and lentils (so 3 kinds of vegetables) vs. someone who eats 30 different plants a day. But very interesting video!

What about nitrites and nitrates in spinach and other green leafy veg, tho? I've heard those brought up as potentially of concern with connection to cancer. Is that a legit concern?
