In this video I am going to teach how to cook the perfect steak as you like, rare, medium rare, medium, medium well, well done. This is Australian style.

First get a beautiful piece of steak. So how do you know it is the best, just look at the marbling in the porterhouse. Marbling is fat found within a cut of meat and between the muscles fibres themselves.
Marbling does two things it keeps the meat tender, moist and it infuses the meat with flavour.
Now put oil on the porterhouse give it some massage and season with salt and cracked pepper very well.
It is time to cook. Heat a pan make it smoking hot so when you put meat tin the pan it need to make sound like this.
I am cooking it medium rare.
As you can see a layer of fat on one side. Burn it make it very crispy so when you bite in it it explodes different flavour inside your mouth.
Ok how do you know it is medium rare.
It is very simple you can touch on the surface of meat. By feeling the firmness of meat. Meat get more former more you cook the meat.
You can find similar firmness on the base of your thumb.
So if you press base of your thumb is quit sift that is similar firmness as rare steak.
If you push your first finger and thumb together that’s medium rare.
If you push your second finger and thumb together that’s medium.
If you push your third finger and thumb together that’s medium well.
If you push your pinky or fourth finger and thumb together that’s well done.
You can check another way by using thermometer.
Rare = 140F
Medium rare=150F
Medium =160F
Medium well =165 - 170F
Welldone =over 170F
