Ingredients:
Eggs
500ml Water
100ml Koikuchi Shoyu (Standard Japanese Soy Sauce)
100ml Mirin

Directions:
- boil cold eggs in boiling water (with 1/2tsp baking soda) for 7 minutes

- cool down and peel while still slightly warm

- combine all the liquids, drop the eggs in the marinade and put in the fridge for at least 24 hours

Finally got the courage to roll the eggs on the counter before peeling them, and they were so easy! They are marinating now, I'll be making ponyo ramen for my husband and myself while we watch ponyo. Thanks for the easy instructions!

Kenji Lopez-Alt actually did a bunch of experiments on peeling eggs and baking soda isn't the trick, it's dropping the egg into already boiling water that makes the most difference

The egg is slightly overcooked because you cooked it for 7 minutes then didn't have enough ice to cool it down and the egg continues to cook. Cook the egg for 6 and 1/2 minutes make sure you have a proper ice bath chill it, marinade, serve

I personally like the egg to be runny so the yolk can thicken the broth but this looks delicious and probably more authentic

Another way to peel and egg is just to put it in a bowl and run water over it while you are peeling it. Works everytime flawlessly.
