I haven't read the book, but apparantly, it disproved this theory, but I do have some idea of why these reasons are there.
The mothers nose probably just looks straight because of the angle in that shot, and the cat can teleport to ither world at will, and he probably does it to show you that the other world does still exist not that they're still there.

The book disproves this theory. The cat is a very strange and mysterious being so it could be possible he can use his powers in the real world.
But also the moss nose could simply be angled to the camera.
Also at the end of the movie when Wybie and Coraline are turning their heads and the camera moves up to the moon, there are clouds shaped like hands moving away from the moon symbolizing that everything is fine.
