Considering the fact we see the same cat in the Frankenweenie movie and it holds a similar role of warning the MC of coming problems, I’d say it’s more of just a spirit of chaos. I don’t think he’s a good spirit, but he’s one that despises the Beldam and will do anything to mess with her.

I love how there is no answer to the cat's existence, and how he subtly guides coraline and possibly the past victims who didn't listen. I like the theory the cat is a sour familar or another witch, maybe even the Beldam's ex lover or assistant that can't get revenge on his own?

I dont think the cat is a witch, I think the cat used to be her familiar. Most witches are seen in media with a black cat companion that usually have their own magical properties. I think that he was the beldam's cat before she started kidnapping children and eating them and turned away from her once she lured and killed her first victim. The cat, now being disgusted and disturbed, now wants to protect the house's residents. It seems that he follows wybie around to keep him away from beldam and the pink palace as a whole.

Ok so HUGE SPOILER WARNING.

This pertains more to the book than maybe the movie, but for those whose read alot of Neil Gaiman, the original author of Coraline.
It was hinted of how the cat was described in the book saying his voice sounds like the voice that speaks in the back of your head, but isn't yours. The same description was given to Morpheus Dream of the Endless: the king, god and practical embodiment of dreams and nightmares in the Sandman graphic novels, describing that he speaks with the same description, while also being known to transform into a black cat.

Its theorized that the beldam was one of his nightmares that escaped from his kingdom when Dream was held in captivity by occultists, until he escaped and ventured out to earth to retrieve his dreams and nightmares that abandoned his kingdom to search for their king or wreck havoc on the waking world somehow which is what the beldam may have been doing by devouring the souls of children. And the story of Coraline is about one of Dreams ventures to eliminate an escaped nightmare in his disguised cat form and through Coralines perspective and help.

I think also when the cat looked back shocked, he didnt only look towards the house but also Coralines doll that was sitting by the window, you dont see it that well but its sitting there and looking at the window.

I honestly just thought that for the whole story of Coraline was that she had voodoo dolls and when she was in a different dimension she was basically like BEING her dolls but her actual self was the mom sewing buttons on the 'dolls' eyes'

Edit: and that the thing to get to the other house, was like veins or something so like she was actually just like in the shoes or "boots", of her dolls she made
