I like to remove the meat, leaving the grease in the pan, then add the flour to make the roux. That way I can control the exact stage of browning the flour gets. The milk can be poured in all at once, it really does make for smother gravy. The meat is added back after the gravy is done.

My my my let me tell you that your secret ingredient makes the dish. I just made this just now and my family is enjoying every bit of it. My secret ingredient was a beef cube, which is still delicious. I've never thought about adding worestshire sauce. Thank you!
