Queen of Roast! Im with you on medium .. it was perfectly done. What a gorgeous yummy recipe, Chef. When I do roast, I usually put onions under it with a cup of beef stock, it makes a great gravy too. My inner cave woman needed this video. So gonna try this! #teamcalibama

Cooking a prime rib to 140 is well done. First off, you need to let your roast come to room temperature, about 6-8 hours. I use a digital thermometer that sits on the counter. 125 degree will be medium rare. 129 will be medium. 135 will be medium well and 140 is well. Once you remove the roast you need to cover it with foil and let it rest 20 to 30 minutes. My son is a chef and will tell you I make the perfect prime rib. I love the way you covered you prime rib with herbs. I will try it, I will just cook to 125.
