While gundry is a nutcase, I question the intelligence of people who diss olive oil. While it's not good for high heat cooking due to the oxidation, it's great for low heat or quick cooking. It's been used since the beginning of time(however long ago you believe that is).

I think we are splitting hairs with cooking oils with olive oil, ghee and cocunut oil .
The Mediterranean region have been light frying with olive oil forever

Olive oil is much better than seed oils for cooking, but it’s still relatively high in unsaturated fatty acids, which are more likely to oxidize when heated (PMID: 35719170, 31764926).

I use Tallow or Ghee. I use olive oil for my salad dressing.
By the way, Dr. Paul I use the brand of Tallow you sell (Lineage) and I absolutely love it for my steaks, eggs, popcorn…I Also buy your honey which is delicious and outta this world!

Cook slow and low and you can use any oil. Food tastes better, texture is better.

Knowledge is power. Many people talk out of their ass thinking they know everything, but you just have to stick with what you believe. People say there's no real research saying seed oil is bad for you. You can clearly see Americans' health deteriated at the same time seed oil was invented.

Put the olive oil in the fridge and wait until you see the hardened part. That hardened portion is the saturated fat from the olive oil. You can safely use it for cooking.

I simply cook with with either no liquid at all or a bit of water, depending on what I'm cooking. After I'm done cooking, I add butter.

The problem with olive oil is that the olive oil you buy at the store is NOT pure olive oil. It is usually mixed in with seed oils and even engine lubricant. It's better to use butter.

Love cookin in ghee. Coats the pan really well, is fairly neutral tasting and has a high smoke point.

I saw one study graphed, and although ghee and tallow were great, olive oil was not too bad like the seed oils which were outliers in terms of massive oxidation. Olive oil was closer to the animal fats than it was to the seed oils.

Greek cuisine is based on cooking with olive oil. Still, the approach is to begin with a tablespoon or two and if, for instance, you're making a vegetable and beans stew (we call it fasolada) once it's done, you incorporate it while the stove is off the heat and the stew is ready. Therefore, the olive oil isn't cooked as much to be oxidized. As for frying, since olive oil is expensive, I wouldn't recommend it.
