Olive Oil has been one of the most used ingredients in kitchens and restaurants everywhere and yet it can be one of the most misunderstood ingredients as well. It's use and nutritional value has been hotly debated over the last decade with messages from don't consume any olive oil to it's the greatest thing around. It's pretty hard to send a message that it's bad for you when the longest living people on the planet regularly consume it. But, there is a difference in the quality of what they are consuming and what's on grocery shelves.

Dr.Gundry, I'm a big fan of your's I'm thankful learning so much from your answers and research, I used to use canola oil 4 years ago, until I found out I was using the wrong oil, Now I use extra virgin olive oil, to sauteed my vegetables, and salads, However, I came across this article written by
Dr. Caldwell B. Esselstyn, Jr., a former surgeon, researcher, and clinician at the Cleveland Clinic, convincingly says that a plant-based, oil-free diet will prevent heart disease all olive oils, including extra virgin, canola oils , butter, coconut oil, all oils damages the endothelium cells, and causes heart disease ” Now, I'm worried, if I should stop using any oil at all, can you comment please? I haven't used my olive oil for 2 days now since I read this,

Thank you for all your work. I was just wondering if capers are safe as far as lectins. I love them on salads I didn’t notice them on the yes or no list but I may have over looked them.

Does freezing or refrigerating olive oil kill the polyphenols? I'll pour the oil into a dish and then quick freeze for a few hours before transferring to the refrigerator to soften and form into a spreadable butter.

Dr Guidry, I consume about half a cup to a cup of EVOO everyday. I douse it over raw cauliflower, radishes, celery, cucumbers and broccoli. I love it and actually crave this lunch everyday. Is there any harm in consuming that much so often? Thank you for your response.

oil says source of oils from EU sources, meaning not from one place. It
has a harsh taste and slightly burns my throat. I drink it daily, but I
want to be sure it is safe. Anyone know? Filippo Berio will not get

A great episode in line with your philosophy would be a 20 min hard focus on Advanced Glycation Products.

Interestingly it's not the highest input concentration into the body that's damaging as many are passed through.
