🧈butter + gut health benefits?? Yes please! Lets make it 👇👇

😳have you ever heard of cultured butter? It’s butter made from cream that has been cultured (fermented).

👍🏻why is this cool?? It brings some probiotic benefits to support the gut, plus fermentation pre digests the lactose, making fermented dairy easier to digest!

👉Making cultured cream is super easy: just add your cream to a glass jar, add a tbsp of a starter culture, like kefir, and let it sit in a warm spot for 24-48 hours.

👇so if you dont do well with dairy or butter, try cultured butter!

here’s how I made it:

- 1 1/2 cups cultured cream (or regular cream for standard butter)
- Sea salt or other flavorings (optional)

1️⃣Remove your cream from the fridge and let it sit on the counter for about 1 hour before making the butter.

2️⃣Add your cultured cream or regular cream to a stand mixer or using a large bowl and an electric mixer. Whisk on medium high speed until the butter starts to clump together and seperate from the butter milk

3️⃣Drain the buttermilk and save it in the fridge for baking or other uses! Use the back of a spoon or clean hands to press the butter and remove all of the buttermilk.

4️⃣Once all of the buttermilk is drained off, add about 1 cup of cold water to the bowl of butter. Rinse the butter in the cold water, knead and squeeze the butter to continue to pull out moisture from the better.

5️⃣Drain the water and repeat step 4 2-3 more times, until the water remains clear. Drain the water.

6️⃣Now, using spoon or your hands, squeeze the butter to extract any remaining moisture.

☺️You have butter now! Add sea salt or other flavorings of choice or keep it unsalted. Wrap in parchment paper and store in the fridge.
