- 1 tablespoon cornstarch
- 1/2 cup flour for coating

- 4 pieces halibut fillets

Tartar sauce
- 1/3 cup of mayonnaise
- 1 teaspoon Dijon mustard
- 1 tablespoon chopped cornichon or relish
