select two vertices, right click + subdivide then press Shift + V to slide the vertex across the edge

If you end up with edges that intersect with no vertex, typically a problem with joined objects. In Edit Mode, turn on "Auto Merge" and "Split Edges & Faces" in the options menu. Select the vertex nearest to the intersection, press the G key, then without moving the mouse click Left or press enter. A new vertex will appear at the intersection. I learned this from the channel called "MyPhysical World", in his video titled "Create a Vertex at Edge Intersections in Blender". Absolute life saver.

Jan, I think the knife tool (K) is the most natural way to add vertices. The only drawback is the extra edge that gets added (but in a predictable way, so not so bad)

Enable more objects addon
Then, press Shift A in object mode and select "single vertex"
