Total weight — Jar weight = cucumber and water weight.

Salt percentage is 2% to 3% of cucumber and water weight

If cucumber + water weight is 1000 grams
Then add 20 to 30 grams of salt

You can add sugar if you like hint of sweetness or much crispy pickles.
