You can get all three of those textures, soft, chewy, and brittle by just cooking the sugar and cream to the correct point. It’s all about temperature in that situation.
I love caramel, and I do make it. The baking soda is probably necessary to make the hard caramel fluffy. But you can make hard caramel without it.
