Been looking for something different to top my cinnamon rolls with, I should’ve been looking to the simple recipes rather than overcomplicating it! I love caramel, and though it's not traditional I find adding a bit of corn syrup after you add butter helps prevent crystalization and grainy texture after it's been in the fridge for a day or two. (In case a stray sugar granule got into it while it's cooking)

Gently brush the side of the saucepan with a wet pastry brush to stop the burn on the sides, helps reduce bitterness.
