Keto Broccoli and Cheese Soup

Ingredients:

2 tbsp. butter
1/2 medium onion, diced
2 cloves garlic, minced
1/2 cup heavy cream
2 cups chicken broth
1 lb. broccoli florets
2 cups shredded cheddar cheese
Salt and pepper, to taste

Instructions:

In a large pot or Dutch oven, melt the butter over medium heat. Add the onions and garlic and cook until the onions are translucent.

Add the heavy cream and chicken broth and bring to a boil.

Add the broccoli florets and simmer for 10-15 minutes, or until the broccoli is tender.

Use an immersion blender to puree the soup until smooth. Alternatively, you can transfer the soup to a blender and puree in batches.

Stir in the shredded cheddar cheese until melted and well combined.
