I want to thank you for all your recipes. My daughter has been a vegetarian since she was 11. Couple months ago she decided to go completely vegan. I was clueless on what to make. Your channel was the first one I found. Now I make homemade seitan, tofu, soy milk, oat milk. She loves mac and cheese so I'm going to try this one for her today. Your channel is still my favorite vegan channel!

This is almost identical to the recipe I use. I do not add any non-dairy milk though, I use the water leftover from cooking the potatoes, carrots, and cashews (which is seasoned, with salt, pepper, minced garlic). I do not add lemon juice or ACV either. It's great for a queso dip too, with red pepper flakes, a little bit of smoked paprika. I also like to use it as a base for vegan broccoli cheese soup!❤

If you're allergic to nuts you can use sunflower seed or sun butter. It's really good in vegan cheese spreads

A dab of miso paste also adds the umami and saltiness. I think this would also freeze well for make ahead meals.

My recipe is similar but different, dear Rose.
Cheeze Sauce

1 cup diced potato
1/4 cup diced red onion
1/4 diced carrot
1/2 cup raw cashews

Boil 10 minutes in 1 1/2 cups water
*do not drain*

High speed blend with
1 tbsp lemon juice
1 tsp salt
1/2 tsp garlic powder
1/2 tsp smoked paprika
6 tbsp nutritional yeast

That’s the BASIC recipe but it only gets better from here. Toss in chilies in adobo or hot sauce. Feel free to back off the salt if you’re adding a bunch of hot sauce.

It’s great for nachos, mac and cheeze, smothered on roasted veggies, dip for French fries, etc.

For the people not wanting to use cashews. This is similar to the one I make for my nonvegan in laws on holidays but instead of cashews I use a little tahini and lactic acid. If you don't have lactic acid just use a plant based yogurt. It provides the same flavor.

I'll likely steam the veggies (smaller amount of water, which I freeze for soup later) and time permitting, I plan to soak the cashews overnight. Ingredient list:
2 sm or 1 med potato, peeled
1 med carrot, peeled
1/4 c cashews
1 liter water (for boiling)
1/4 c nutritional yeast
1/4 c non-dairy milk
1 T lemon juice
1/2 t apple cider vinegar
1 t garlic powder
1 t Dijon mustard

Oooh I just made a large batch of this, and have a few jars in the freezer. I put this shit in everything! Edit: if your don't have cashews you don't need them, and a roasted onion and garlic cloves add an extra yummy boost!

I love that this cheezy sauce is made with readily obtained ingredients and works up quick and easy, PLUS no liquid waste - - (no vegan "whey"?) !!!

I just made this yesterday and it’s so delicious. It’s better the next day. I’ve been using it as a dip with Tostitos. I had to add some more lemon juice, vinegar, and salt. I also added in an onion with the potatoes, carrots, and cashews and a then when I blended, added a tablespoon of cornstarch. It’s so smooth and creamy. Super delicious. Definitely going to be my go-to.

i’m lactose intolerant and i’m trying to find ways to enjoy mac and cheese without dealing with the consequences of eating dairy, so this is very helpful! i don’t have a blender but this shall be a perfect reason to buy one lol thanks for sharing this recipe!

I make this cheese sauce probably once a week lol. Vegan nachos, mac & cheese, quesadillas- it literally works on everything!!!

Hi. Thanks so much for this recipe. Just made a double batch. I love it! In keeping with "lazy" I didn't peel the potato or the carrots. Still wonderful and a bit rustic looking. I like the comment about miso. Might try that as well as a pinch of cayenne when I want it hot.

After watching this, I threw a sauce together wihtout even measuring, just kind of going by sight from watching the video, and it came out amazing!! This is my first time ever trying to make a vegan cheese type sauce! I just kept tweaking it with this or that til it was to my taste. I wish I'd realized how easy this was ages ago! I love that sauce, i make it every once in a while. I put pickled jalapeños, chipotle chili powder and a grilled paprika from a jar in it and make it a nacho cheese sauce like the one you get in the cinema ✌🏻

I'm mostly plant-based and closer to be becoming vegan than ever and a lot of that is because of your recipes, which have helped me explore the cuisines of other cultures as well. :)
