Authentic Chicken Adobo 🇵🇭

This is how you make authentic chicken adobo fast!

Ingredients:
- 8 chicken drumsticks
- 2 tbsp oil
- 1 tbsp whole peppercorns
- 20 smashed garlic cloves
- 1 cup Datu Puti cane vinegar
- 2/3 cup Datu Puti soy sauce
- 3 bay leaves
- Salt to taste
- Green onions for garnish

Steps:
1. Sear chicken in hot oil until browned
2. Sauté garlic, peppercorns, bay leaves until fragrant
3. Deglaze pot with a splash of vinegar
4. Add chicken back, pour in vinegar & soy sauce
5. Pressure cook on high for 15 mins
6. Quick release, then simmer to thicken sauce
7. Season with salt if needed
8. Garnish with sliced green onions
9. Serve hot over steaming rice! 🍚

To reduce anxiety for people who don’t have access to Philippine brand stuff: any white vinegar is fine and the soy sauce needs to be regular, not dark not light. ❤

My friend, why not marinate the chicken in soy sayce and vinegar plus the rest of the ingredients and cook it afterwards? The flavor is locked in this way. Might even taste much different, also my Dad taught me to not use alot of water and only use vinegar and soy sauce as the water will dilute the flavor.
