How to Eat Healthier: Eat Veggies 5x a Day | Keri Glassman

Eat more veggies! Duh. We all know we should be eating more veggies, but we don't always do it. So I'm gonna make it easy for you to get them in 5 times a day! You can do it!
BREAKFAST: scramble an egg or two with some mushrooms, or peppers, or spinach - it takes no more time than just scrambling eggs alone! Or, make muffin tin egg bakes that you can reheat in the morning, or grab a smoothie loaded with greens if you're on the run.
MORNING SNACK: Grabbing a handful of nuts like usual? Add some red pepper slices to the other hand! Or make a big batch of zucchini or kale chips on the weekend and portion them out ahead of time if you tend to go for crunchy and salty mid morning.
LUNCH: Salad eater? Awesome! But I'll challenge you to add TWO more veggies than you normally do. Sandwich eater? Throw some tomatoes or greens in between that bread - it's easy to add SOMETHING to a meat and cheese sammie. Or, add a side salad and skip those chips you normally choose. Burger eater? Not ready to go the salad route yet? Let's start by skipping the bacon and adding lettuce and tomato on top of that patty. Start small, and eventually it will get easier, I promise!
AFTERNOON SNACK: Make a big batch of quinoa or tabbouleh and add in extra veggies to those grains! Love an apple and peanut butter? Swap the apple for celery this week and change things up!
DINNER: Roasted chicken and potatos again? Try roasting broccoli and cauliflower with your chicken! When you think of veggies, it doesn't have to be old school plain and steamed. Kids even love lightly burnt veggies - try it! Make a big batch and you'll have plenty of leftovers for meals throughout the week.
