I use Avocado oil and beef tallow to make mayonnaise. It's a fairly neutral taste so my mayo doesn't taste too much like beef.

I use a little bit of 100% non GMO avocado 🥑 oil in the pan when i pan fry steak, eggs, salmon. It has a higher smoke point than olive 🫒 oil.

I am lactose/dairy intolerant so i don’t buy or use butter.

The smoke point of avocado oil is 520 F. That is higher than tallow (420 F) and butter (350 F). Tallow and butter have been shown to oxidize significantly when heated to high temperatures. It appears avocado oil is better unless you want to cook things low and slow. It is also helpful to eat vegetables and fruits with antioxidants, which meat has none of, to negate some of the oxidized compounds.

One thing is for sure, Paul's information along with the information of the ketogenic diet changed my entire diet. I'm not always fit, actually...never, but I'm no longer bloated and always in control of it

Avocado oil has a very high smoke point…some say 500° F.

You can also fry with water and add the oil later on the food without heating it at all. Very healthy and affordable too.

On pan I use butter but in air fryer I use avocado spray to prevent sticking.

I only cook with coconut oil these days. It helps with managing my candida symptoms, as I work on healing my gut. I used to do butter, then I realized I still have a reaction to that. I also used to do tallow for when I did carnivore for 4 months. But my body can't manage red meat anymore either, so I stay away from tallow.

As far as avocado oil, one it's way more expensive than any other oil. But also I have a histamine problem and avocadoes are high on the list. And I do use olive oil sometimes, only one I use these days is Graza because I know it's 100% and it can be traced back to it's supplier. And I don't cook with that, only add it to food as extra fat.

Everything I've read says the smoke point of avocado oil is 450 degrees so it is good for high heat. I use chosen food brand and it's been tested and is 99% pure

I cook with olive oil all of the time. Extra virgin olive oil is perfectly safe to cook at low and medium temperatures.

Please correct me if i'm wrong, but wouldn't the antioxidants inside the olive oil protect against the downsides of oxidation.

Mediterranian people been cooking with olive oil for a LONG time. I really think you should give olive oil a chance it is really really healthy especially cold pressed extra virgin olive oil from the mediterranian!
