Lets make 3 High Protein Vegan Breakfast Recipes!

Ingredients:

Chickpea Egg Scramble:
Aquafaba from 1 14 oz can of chickpeas
1/2 cup chickpea flour
Handful of spinach
1/4 red onion, sliced
1/4 red bell pepper, sliced
1/4 green bell pepper, sliced
1 tsp black salt
Salt
Black pepper
Garlic powder
1-2 tbs avocado oil
8oz of baby Bella mushrooms

Marinade:
6 tbs coco aminos
3 tbs avocado oil
2 tbs rice vinegar or apple cider vinegar
2 tbs maple syrup
1 tsp liquid smoke
1 tbs steak seasoning
1 tsp smoked paprika
Black pepper

Vegan Breakfast Burrito:
8 oz oyster mushrooms
1 sweet potato, cubed
1/4 yellow onion, sliced
1/4 red bell pepper, sliced
1/4 green bell pepper, sliced
1 8oz pumpkin seed block of firm tofu
Burrito wrap

Vegan Egg Sauce:
1/4 tsp turmeric
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 smoked paprika
1/2 tsp chipotle flakes
1/2 tsp black salt
Black pepper
1 tbs tahini or almond butter
2 tbs nutritional yeast
1/2 cup plant milk
1 avocado oil
Salt to taste

Vegan French toast:
3 Slices of High Protein Vegan Bread
1 can worth of Aquafaba
1/4 cup almond milk
1/4 cup chickpea flour
1 tsp cinnamon
Pinch of nutmeg
1 tsp vanilla extract
1 tbs avocado oil
Monk fruit powder
Maple syrup
Blueberries
Strawberries

I've been vegan for more than 20 years and I'm always surprised by how creative people are able to get with plant-based meals. All these breakfasts look absolutely amazing. The use of aquafaba to make scrambles is just brilliant. Never tried it before but I sure will. Excellent work, Chef!

Fruit smothie, protein powder oats, avocado toast with vegan eggs, also I have added apple cider vinegar to my pancake mix for probiotics which are good for gut, I don’t even taste it but I’m glad I know it’s there
