Day 2 of 30 Days of Healthy & High-protein Breakfast Meal Prep Recipes: Pancake Bowls😍 These contain between 27-36g protein per serving, depending on which yogurt you use! So many of you wanted the recipe when I showed these in my meal prep video, so I had to share the full recipe☺️ I used all purpose gluten-free flour mix in these which contains psyllium husk powder which absorbs some of the liquid, so if using a different type of flour, like wheat flour, you might need to add more of it, about 1/4-1/2 cup / 60-120 ml more should be enough!

More recipes in my Ebook which has 100 healthy & easy recipes, link is in my profile🥰

Ingredients for three servings:
2 1/4 cups (lactose-free) low fat Greek yogurt (5 1/2 dl / 570g)
6 eggs
1 tablespoon maple syrup or sugar, or more to taste
1 tablespoon vanilla extract
1 cup all purpose (gluten-free) flour mix or oat flour (2 1/2 dl)
3 teaspoons baking powder

Toppings:
berries

1. Mix the wet ingredients together
2. Add the dry ingredients and stir to combine
3. Divide into three greased glass containers
4. Top with berries
5. Bake at 180 Celsius degrees / 350 in Fahrenheit for about 20-25 minutes
6. Store in the fridge
7. Reheat in the microwave before serving

For those wondering, this comes out to about 438 calories on myfitnesspal and 29 grams of protein (I used about 1 cup of fruit and Fage 2% yogurt)

I made them today! Made them without toppings so I can change my mind spontaneously per day. They turned out so tasty! Taste like mild cheesecakes ❤

Thanks Selma! Fantastic recipe.
I cut the recipe in half and made two pancake bowls for my kids for a nice Sunday breakfast. Came out perfectly, and my boys loved them!!

Have made 3 times already! Fyi... Frozen fruit is not ideal. Takes longer to cook and consistency is slightly different. Still great taste though ❤
Contains shape also varies cooking time!

Made these as muffins. I did add PBFit powder, protein powder, collagen, salt, cinnamon, and Oatmeal to the recipe. Muffins make it easier to grab and go.

If you use regular flour, it takes way more than 20-25 min to bake. Took me around 40 mins. Not my favorite recipe but I’m wanting to try some of her other recipes, not sure if my all purpose flour messed it up or not

I made this for meal prep this week and it came out really good. Was able to spread the batter into 4 bowls and it still worked well. It’s very filling and tasty! Thanks for the recipe.
