Stuffed Bell Peppers are a great way to enjoy summer's favorite veggie. These bell peppers are stuffed a delicious cheesy ground beef and rice mixture that your family is sure to love!

✅Ingredients

• 6 whole bell peppers, any color
• 3/4 to 1 pound lean ground beef
• 1 white onion, diced
• 3 cloves garlic, minced
• 1 (15 ounce) can diced tomatoes, drained
• 1 cup cooked white rice
• 1 cup frozen corn
• 1 tablespoon Worcestershire sauce
• 1½ teaspoon salt
• 1/2 teaspoon black pepper
• 1½ cups shredded pepper jack cheese, divided

✅Instructions

1️⃣ 00:00:20 - Preheat oven to 350 degrees F. Lightly grease a 9x13 pan.

2️⃣ 00:00:26 - Trim the tops off each bell pepper and remove seeds and membrane from inside. Place the bell peppers into the prepared pan.

3️⃣ 00:00:50 - In a large skill over medium high heat, cook ground beef and onion until browned. Drain any excess fat or liquids. Add in garlic and cook 1 minute more.

4️⃣ 00:01:30 - Remove from heat and stir in tomatoes, cooked rice, corn, Worcestershire sauce, salt, pepper, and 1 cup pepper jack cheese.

5️⃣ 00:02:12 - Spoon mixture into bell peppers until full. Sprinkle remaining cheese over the top.

6️⃣ 00:02:48 - Bake in the preheated 350 degree oven for 30 minutes until cheese is bubbling and browned.

Very good video. My mother used to make these and I've made them myself for years, with little change. I'm 70yo and your way of making the meat stuffing is excellent. The only difference is the addition of cheese into the stuffing and I leave my peppers in the oven a little longer. Thank you for sharing your stuffed peppers with us.

We planted bell peppers this year and all I can say is that we had a lot of them, that we were able to pass along to friends etc. Decided at the last minute after already slicing them up and putting them in the freezer, wanted to make some stuffed bell peppers and came across your recipe. It came out and tasted GOOD. THANKS

I made 6 of these delicious peppers a couple of days ago. My husband and I are fairly recent empty nesters and my mom who lived with us died a few months ago so I haven't yet gotten the hang of making meals for two. Having said that though, I called up my cousin and gave 2 to him and when I tell you my guys LOVED them, it's a gross understatement. Yay me!

Just a little hack I’d like to share. Use canning jar rings to help your peppers stand up. I use them only because usually, don’t make that many.

Hi Rachael,

I just tried your recipe for the first time and you are absolutely correct about how easy it is to make and how good the filling is!

Here are some changes I am going to make to match my personal preferences.

No change to the filling it’s perfect the way it is other than I am going to double it and use the extra filling to surround the peppers in the pan with it to keep them upright before I put them in the oven. As I serve each pepper I’ll put a serving of filling on each plate next to the pepper.

I like my peppers a little more softer then they come out with this recipe, so I’ll boil them in water for a about three minutes before I fill them and then follow your recipe from there.

We have been making these all the time. It is best if you first brown the peppers before stuffing them, for more flavor. My son is a chef and recommends making them that way.
