Love this!! We make these in Algeria, except we scorch the skin till burnt and peel to get great flavour and texture depth. The filling is more heavily rice to mince ratio and the tomato sauce is cooked separately and consists only of garlic, olive oil and salt&pepp. Subscriber of many years, thank you!

I made these today. I unfortunately used really big bell peppers which were super thick. It ultimately took 45 minutes for the uncovered bake to make the pepper tender. Soooo worth it. AMAZING. THE BEST I HAVE HAD AND THE FILLING IS SECOND TO NONE 🎉

Thanks for the tip on cutting the peppers down the center. It made it much easier for me. I made this the other night (for the first time in many years) for four people (my husband and me and two guests); the filling was just enough for all eight halves of the peppers. The dish was a *huge* hit with everybody! I felt humbled and truly blessed. Thank you for all your great recipes.

My dad and mom have two completely different tastes when it comes to food. Now that they are older, I cook for them and it is challenging to make something that they both like. They both liked these peppers!

Love the green pepper version. So wonderful, the bitterness of the green pepper after baking just tastes like such a fresh pepper baked with that wonderful stuffing and sauce.

I grew up on these! YUM! Made a 1/2 recipe cuz there's only 2 of us. Modified based on what I had on hand: Rotel tomatoes in place of the diced, added paprika and Italian herbs to the meat & sauce. It was FABULOUS! Been following you for years, making your recipes my own for the most part b/c I tend to use what I have available but it always works out GREAT! Thanks, Chef John!

Made these last night. Excellent. Love having plenty of sauce/onions. Couple of changes for next time. Ended up with too much stuffing so will try 1 Lb of hamburger and 1-1/2 cups of rice. It took for ever to get the peppers soft. Next time microwave the peppers for a couple of minutes to give them a head start. Since I have the pan out for the onions, I will brown the meat first, then into the oven for a short time to get all the ingredients acquainted.
