Garlic Parmesan-Stuffed Mushrooms

Here is what you will need!

Makes 15

Ingredients
15 mushrooms
1 tablespoon canola oil
2 tablespoons chopped garlic
½ tablespoon kosher salt
½ tablespoons freshly ground black pepper
8 ounces softened cream cheese
¼ cup Italian breadcrumbs
½ cup shredded parmesan cheese, divided
2 tablespoons chopped parsley
Kosher salt
Freshly ground black pepper
Chopped parsley, to garnish

Preparation
1. Preheat oven to 350°F
2. Cut the stems off of each of the mushrooms and finely chop them, setting the mushroom caps aside for later.
3. Heat the oil in a pan over high heat. Cook the chopped stems with the garlic, salt, and pepper for about six to eight minutes, constantly stirring. Be careful not to burn the garlic. Remove from heat.
4. In a medium bowl, combine cooked stems, cream cheese, breadcrumbs, half of the parmesan, parsley, salt, and pepper, mixing until evenly combined. The mixture should be extremely thick.
5. Space out the mushroom caps evenly on a baking sheet, upside down. Spoon a generous amount of the cream cheese mixture on top of each mushroom. Top each mushroom with a sprinkle of parmesan cheese. Bake for 20 minutes.

I made these, *but* ...
I took the stems out (didn't cut them).
Then while I cooked the mushroom stems, onion and garlic (I added onions). I put the mushroom tops *upside down* in the oven for about 10 mins or so. Let all the water drain out (you'll see the water start to come out), took them out and placed them upside-down on a paper towel (to drain the rest of the liquid out, there was a lot more).

Mixed the ingredients together (I used Italian breadcrumbs) I did *not* add salt at all. Breadcrumbs, parmesan cheese and cream cheese have enough salt, no need to add more.

Then stuffed them and put them back in the oven. They didn't come out soggy.

you *cut* the stem off?

NO!

You are supposed to remove the stem completely, snap it off, so there's a cavity, so you can *stuff* the stuffed mushrooms!

These mushrooms aren't stuffed, they are topped!

Tried the recipe today, if anybody else is going to cook this, dont put 1 tsp of salt in the stuffing, its way too much. Start with 1/2 tsp and taste if it's alright for you.

I use little parm and alot of colby Jack 0:56 add bacon on top and in the mixture aswell i also add garlic with the onions and a little crushed red pep
