Delmonico's is widely considered to be one of the very first sit down restaurants in America, born at a time when New York offered little more than taverns and oyster cellars. Culinary mainstays like eggs benedict and baked Alaska were invented in their kitchen.

Executive Chef Billy Oliva invited Business Insider into the Delmonico's kitchen to give a master class on cooking steaks to temperature.

Thank you for not berating those of us who prefer our steaks medium to medium well... I hate the pressure to eat steaks rare as if it's a measure of intelligence.

I used to eat my steak well done when I was a kid and didn't know no better. At the thought of eating meat raw was not very appealing to me. I still remember the first time I ate a medium rare steak and it shocked me how delicious it was. Never looked back.

Steak is so versatile…If they over cook it, it’s good, if they under cook it, it’s good and if they cook it just in the middle it’s still good 😂😂

Medium is the best way. I can sometimes do medium rare if the crust is immaculate & it’s an expensive filet. 99% of the time medium is what I go for, it’s perfect mix of tender & cooked

There is no blood in the steak - he made a mistake mentioning it in the video. The liquid is meat juice (mostly water with myoglobin from the cell tissue).

Well done looks inedible. Steak has to be eaten rare to medium rare for full flavor.
