Zero waste carrots! #shorts

With just 1 Kg of carrots we made juice jam packed with vitamins to enjoy every morning and used the pulp for some delicious zero waste cupcakes! Easy, quick and low energy usage!
CARROT 🥕 JUICE 🥕
•1kg carrots
•1 lemon
•Makes around 1L juice
•You can get creative and add more vitamins like ginger orange ecc.
We prefer it simple store in fridge up to 3 days , shake before consuming.
CUPCAKES🧁🥕 (Makes 12)
🥣Dry ingredients:
•1-1/2 cup flour
•1tsp ginger
•3/4 cup coconut sugar
•1/2cup shredded coconut
🥣Wet ingredients:
•2cups carrot pulp
•1 cup yoghurt
•1/4 cup coconut oil
•1 lemon grated
- In a bowl mix all dry ingredients then add the wet ingredients and combine. Don’t overwork. Divide the batter in 12 cups and bake at 180* for 20 min.
- Add the frosting and grate some orange zest on top.
- Store in an airtight container up to 4 days .

🧁FROSTING:
•1-1/2 cup overnight soaked cashews (or 20 min in hot water)
•1/2cup coconut cream (keep the can in fridge without shaking,it will divide in 2 layers,use the top solid one only)
•2tbsp maple syrup
•pinch of salt
•lemon zest
•vanilla (vanilla pod preferably)
- Blend all ingredients until nice and creamy texture. Store in fridge up to a week.
