We brought this recipe back from Argentina while we were on holidays in Mendoza. On the trip we were toured by a group of gauchos on horseback through the base of the Andes and we of course grilled up some steaks. This was the chimichurri recipe we learned while we were there and we wanted to share that.

In summary, the ingredients:
1 cup of parsley
4 cloves of garlic
2 tbsp oregano
1/3 cup extra virgin olive oil
2 tbsp red wine vinegar
1/2 tsp sea salt
1/8 tsp black pepper
1/4 tsp chili powder

Made this exactly like shown, except I used fresh oregano (6+ finely chopped tablespoons == 2 tablespoons of dry) and a bit more salt. Fantastic! This is the one! Make this stuff!

You could add 1 or 2 teaspoons of paprika to that amount, we do it sometimes, of course that's optional your recipe is correct.

I’ve never been to Argentina but I’ve had chimichurri and that one looks spot on Jared. It really does go so well with steaks, simple and fresh. Awesome job brother!

chimichurri!!... Have you tried Al frugoni's dry chimichurri seasoning? You can have great chimi without all the work and it's really good!!

The original Argentina way of making chimichuri does not include cilantro however you can add it if u choose to do so.
