SPAGHETTI CARBONARA
1 lb Pancetta, about 1/2 inch chop
3 extra large Eggs + 2 Egg Yolks
1 cup Pecorino Romano Cheese, grated
1 lb Spaghetti
1 Tbsp Salt for pasta water
1 Tbsp Black Pepper, or to taste

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. It is in the province of Foggia in the Puglia region of southeast Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina enjoys making food for her family in the same old fashion ways as she was taught by her mother and grandmother in Italy, and also new things she has subsequently learned from family and friends in America. She also enjoys gardening, and being an active member of her local Church.

Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.

Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.

Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!

Who is behind the camera and behind the scenes?
Grandma Gina’s retired son-in-law, Nick, does the filming, editing, production, and channel management. Her daughter, Maria, helps with food preparation, kitchen setup and fan support. Also, Grandma Gina usually has one or two grand-kids in the kitchen to help.

Does Gina read the comments?
We print out and show her how much love she gets from all her viewers, and she is very thankful and hopes you enjoy her cooking! Your comments bring her lots of joy, laughter, and inspiration to make more videos to share with you.

There is no other YouTube video quite like Buon-A-Petitti .... It is so down to earth real. Whoever is in charge, you capture the feeling of being in the kitchen with her. Those old pots and pans are the same ones I learned on growing up. They work well, IMO, better than some of the new stuff with celebrities' names on them. I am amazed at how some of the dishes she prepares are exactly like those in our house. It's like I'm a kid again watching and helping. A big THANK-YOU for these videos. Our culture has changed so much. There are now people in their 40's and younger who do not have a clue as to how to cook these great dishes. THIS IS THE NEW WAY OF PASSING IT ON. Keep the videos coming.

Out of ALL the Carbonara videos I’ve watched, I’m using this one. Grandma Gina is the real deal…straight and to the point. I would love sitting in the kitchen and just watching her cook and sing. I’m watching every one of her videos. Thank you for sharing your cooking wisdom, Gina!😁😘

See this is the thing. This Italian grandmother uses pancetta instead of guanciale because it was what she could find. It's not always about using whatever is used traditionally 100%, Italian cuisine has always been about cooking with what you've got and what you can find. Amazing video

I turned on this video and instantly started crying. My own grandma had a stroke last week, she's not doing very well and I'm not taking it so well... She taught me how to cook and has been one of the closest people to my heart. Thank you for being the grandma of the internet. 💖

How could anyone on earth have disliked this video? Who could be more skilled, more sweet, or more authentic than this grandmother? I grew up cooking with my mom. She’d have been Gina’s age. by Nothing better on this earth.

Hello grand ma Gina,
I am of Italian origin as my father was Italian and my grandma came from Pissarro and my grandoa from Padua.
My dad married a french speaking woman from Quebec and i married a English man from Newcastle.
I watch your videos all the time and i have so much respect for you and admiration.
I'm 75 years of age and today i made just a half bushel of romana tomatoes and i was wondering how in the world you can nake 10 bushels.
That was a lot of work, but i understand you when you say that you were so excited to get going whith your tomatoes.
I love cooking to and i try to teach my granddaughter about the Italian side of the family.
All this long speach Gina that i have such a pleasure to see you singing and cooking. I recognize myself and my love for the Italian food and culture.
I have been in Italy, but never visit the part of Italy you come from, however, i will make sure to visited ot next time i go if God permits.

I love watching you cook and listen to your stories. I have always wanted to come to Italy, and since I started watching you, the longing for your country grows stronger and stronger.
