I made this this evening, with pancetta and parmesan as we had them in the fridge and they needed using up - amazingly easy to make, and very tasty!

The pan was too hot and this time the eggs did scramble. When this happens to me, I tend to wait a bit and then put another fresh egg. It's not the same, but closer than adding water

Love the guy. But he scrambled the eggs. Pan needs more time to cool or add alittle more pasta water to cool the pan. Ive made this about 1000 times. But even if you scramble, it taste good! Haha
