Finally found someone who makes Carbonara exactly the way my mama makes it! She was German and I still make it the same today for my family. Now my daughter makes it for her family. Thank you it's a great heritage.

After watching this, I finally felt confident to make myself spaghetti carbonara for dinner. I couldn't believe it, but I succeeded and I feel so happy and proud (and full)!! I love watching Pasta Grannies videos, because they are such dynamic and inspiring women! Another great vid and, yes, one of the legit ways to cook this caloric bomb of ours. Most of what you find on YT is not the real deal, with cream, onions, minced garlic, parsley and even mushrooms being added to the base. Granted, any variant can be a great dish on its own, but should not passed off as the rustic peasant recipe that carbonara is supposed to embody. In fact, the name itself testifies to the humble origins of the sauce, which can be prepared without any fresh ingredient, but only ingredients with a long shelf life: eggs, pork cheek, ewe's milk hard cheese: lots of calories for hard-working men spending weeks segregated in the forest, where they slowly roasted piles of wood to obtain charcoal. These men were called carbonari. After WW2, carbonara became very popular amongst locally stationed US troops, whose fondness for eggs and bacon did not passed unnoticed. Local restaurateurs sensed good business and since then carbonara has been a staple in Roman eateries.

One normally doesn't use pancetta - it's guanciale whcihs tastes quite different! To finish the sauce and generate the "crema" (without adding cream of course!) you add some pasta water to the spaghettis over medium heat and stirr - the pasta water together with the solved starch of the spaghettis give the "crema"...

Now, had a non-Italian put white wine in the carbonara, our Italian friends commenting would be crazed. Carbonara traditionally has no wine in it. Even the starter with some olive oil is questionable and only permitted if the guanciale does not have enough fat.

Just made it like this Nonna did! My god absolutely incredible best one have ever made, eggs scrambled a bit though, but I didn't add any water to the eggs to temper them, could that be why? Will try that later as having this for supper too!

Danilo is a little up-scale in Rome. Like Roscioli (who use only the egg yolk) the cheese there is parmigiano. But I suspect pecorino is more traditional.

Every family / region has a different recipe for a dish like this. This one looks fantastic but I don't expect it to be exactly the same as other regions.

I'm gonna try it tho, looks delish.

I don't want to sound weird... as it's an Italian grandmother cooking but do you usually use white wine in carbonara? I thought you should use a little of the water that the pasta boils in.
