Thank you Rie for telling me I can freeze scallions! When I was young I met a Japanese girl in school. Our mothers met and became fast friends. She taught my mother to make what she called Japanese snack. Ramen hot dogs and cabbage. We invented many variations over the years. My mother loved the original and when I was taking care of her in her 90s she was always very happy when I made it. One of the variations I made was chicken scallions and slivered almonds. I always have the chicken the almonds and ramen but not always the scallions. Now thanks to you I will! Going to buy a big bunch tomorrow!

I never liked natto growing up but then I ate it fresh when I went to Japan and realized what a world of a difference it makes when you eat a fresh, not frozen natto. Now, whenever I go to Japan, I eat natto everyday and will even go to the convenience store and buy the natto maki for breakfast or a midnight snack. I like adding chopped green onions to my natto, if I'm eating it with a bowl of rice.

I love Japanese breakfast! FYI, if you don't have a tamagoyaki pan it's not too hard to make an omelette in a round frying pan. You can just "fold" the edges of the layers into a square before you roll them.

I made this breakfast this morning with a few alterations, since I don’t like eggplant I substituted that for zucchini, and I’m allergic to soy so I decided to make some red bean paste instead since I like to have a bit of sweetness with salmon when I eat it and it all went so well together. I usually don’t eat breakfast because it’s so heavy and it makes me feel tired, but this made me feel energized and ready for the day especially since I paired it with freshly made matcha for a drink. Thank you so much Rie, since I’m a paramedic, having something nutritious and quick that won’t slow us down that I can quickly cook in the morning for everyone on shift is really helpful.

This was so interesting. As someone from the US and Canada, I am used to a big heavy breakfast. This opened my mind (and stomach) to trying something different.

I would love to see a collab with you and Claire Saffitz. I love how you both have an incredible respect for food and I think a Japanese deserts episode would be really fun to watch :)

I love this video, I went to japan for a month a few years back and every morning I would have a Japanese breakfast, it was much lighter than what I’m used to and got me ready for the day

I studied abroad in Japan for a semester and my host grandmother made Japanese breakfast almost every day. 🥺 I loved it so much when I went back to the states, I wanted only Japanese breakfast for my morning meal. I love western breakfast and brunch still on weekends, but I mostly eat Japanese breakfast and Turkish breakfast as both are light and refreshing (and both still have egg components!).

This is the first video I have watched and I loved it - you're very informative and entertaining. BTW, even though I'm not Japanese, I love natto. We have a Japanese guy in Sydney who makes natto. It's always sold fresh and never frozen and is therefore much fresher than the imported stuff. It doesn't come with the mustard and sauce and a Japanese girl told me to mix it with 1 tsp shoyu, 1 tsp mirin, 1 tsp brown rice vinegar and half tsp pure maple syrup. It's seriously delicious.
