Canning that way does seal a jar, but you need to process them in a boiling water bath or pressure canner to bring them up to a certain temperature that will kill any microorganisms and bacteria in order for them to be shelf stable and safe to eat.

Just an idea... but slice those jalapenos down the middle and de-seed and fill with cream cheese, bacon bits, and shredded cheese and freeze them. GREAT appetizers!!! You can bake them later. Soooo good!!!

Thank you for the gardening/canning content. I like seeing what others do with their bounty. My question do you all do with the frozen zucchini? I have only shredded and froze for zucchini bread, but I'd love some ideas for this stuff. And a tip I learned a couple of years ago (incase you haven't heard this yet) is the longer you let the jalapeno sit on the plant it will get hotter. The more "veins" you have on the jalapeno the hotter it will be. So if you like a milder jalapeno pick off the plant quickly and if you like them spicy leave them there till they develop veins on the skin. :)

Love the canning recipe, and I didn't know that you could freeze zucchini without blanching, so thank you!

Love this! My garden is just getting going here in SC. We have had an usually cool spring ( 🎉) so my stuff is just beginning to come in! I usually made apple butter in the fall in the crock pot. My mother had a FIT when she discovered that I sealed without boiling lids.😂 I mean, WHY would I do that when the jars just came out of the dishwasher & the butter is bubbling??? Answer: "Because that's what you do!" Ummm, no. That's what YOU.😊

I never knew you could do that. Did you intend to put "sprinkle with 1 tsp" sugar instead of salt in the directions?

Thanks for sharing. My dad gives me jalapenos from his garden every year and I make jalapeno poppers with them and freeze. I haven't tried them pickled like that. So trying your way this summer!

There’s a roadside stand with $5/bushel green beans. I thought about canning them, but my schedule has been a bit too hectic.
