If anyone does this and their garlic turns blue or green its fine. It's just a reaction between sulfuric compounds in the garlic and the vinegar and the only difference is the colour, it's more common with old garlic, but it doesn't necessarily have to be old. Just to prevent anyone who hasn't seen it happen before throwing out good garlic.

And let’s talk about that brine!! I add it to EVERYTHING. Tuna salad, salad dressing, soup, deviled eggs, pasta salad, marinades, steak sauce, etc. Anything that could use a subtle tang and light garlic note gets a tablespoon of this brine.
