Recipe:
Ingredients:
6 large eggs
White vinegar (optional**just for boiling**)
1/2 cup of soy sauce (low sodium recommended)
1/4 cup water
1/4 cup mirin
2 tablespoons granulated sugar

Instructions:

1.Bring a pot of water to a boil and gently place the eggs in the boiling water. Let the eggs boil for 6 minutes for the perfect soft boiled eggs.
*If you wish, add some vinegar to the water.
This will make the eggs a bit easier to peel, especial when the eggs are not hard boil eggs. Use 2 tablespoons
2.remove eggs and put into ice bath after 6 minutes
3. make the soy marinade. In the marinating container or a bowl, combine the soy sauce, water, mirin, and sugar. Stir until the sugar has dissolved.
If the marinate was made in a bowl, transfer to the container that you'll be marinating in.
4.peel the eggs then add into the marinade and let is soak for at least 8hrs (best overnight)
** if all the eggs aren’t fully submerged before sure rotate the eggs occasionally**

My little experience for all folks out there wondering about soft boiling the eggs.

Wait for the water to boil THEN put ur eggs in (don't put eggs in cold water from the beginning, that's hard for the timing). Boil the eggs for 6 and a half mins or 7 mins max, then IMMEDIATELY put them in ice water (to prevent the eggs to keep cooking themselves).

A little bit of vinegar or salt in water while boiling is for easy peeling, not for seasoning.

Since it's soft-boiled, be very careful when you peel, u wanna use your fingertips, not your nail cuz you might split and crack the eggs

Edit: If it's quail eggs, then do the same as above but you just need to boil them for 2 mins
