Glutenous Carbs- Gluten refers to several different types of protein found in wheat, barley and rye. When you mix water, yeast and gluten-containing flour, then knead them together, the gluten proteins form an elastic-like web that traps the gases produced by yeast. As gases caught in the gluten matrix expand, they make the dough rise - when the dough is baked, gluten proteins help the bread maintain its shape and texture.

Gluten and Inflammation/Stomach- The proteins in wheat are gut irritants: they’re like that paper cut or splinter digging into the lining of your gut, causing an inflammatory response. Inflammation from wheat is a problem even for people who aren’t sensitive to gluten specifically - amylase trypsin inhibitors (ATIs for short) can provoke an inflammatory immune response in the GI tract by stimulating immune cells. *ATIs are pest resistance molecules in wheat, as strong activators of innate immune responses in monocytes, macrophages, and dendritic cells* Inflammation in the gut contributes to a problem called intestinal permeability. The gut has a very complex system of “border control” that lets digested food into your bloodstream (this is how you get nutrients from it) while keeping everything else out. Every day, you swallow millions of random viruses, bacteria, indigestible molecules like dust, and other stuff that needs to go out the other end, not into your bloodstream. Inflammation in the gut loosens the junctions between cells in the gut wall so too much stuff can pass through - often described as making the gut “leaky.” On top of inflammation leading to increased permeability, gluten accelerates this process by stimulating the release of a protein called zonulin.

Zonulin independently contributes to loosening the junctions between cells in the gut. Add together the inflammation and the zonulin, and gluten has a powerful effect on gut permeability. This can lead to bloating, fatigue, mood swings, and hinders nutrient absorption (nutrient absorption in the large intestine is impaired, resulting in a reduced amount of nutrients being absorbed from food)

Gluten and the Brain- Gluten-triggered inflammation in the gut can instigate inflammation in the brain, referred to as neuroinflammation. Consumption of gluten triggers dysbiosis and gut inflammation and increases the permeability of the intestinal barrier. Increased intestinal permeability allows lipopolysaccharides (LPSs) produced by gut bacteria to leak out of the intestine and into the systemic circulation - leaked LPS’s trigger the immune system to release pro-inflammatory cytokines. LPSs and pro-inflammatory cytokines in the circulation cause toxins to accumulate in the blood stream, inciting systemic inflammation. When systemic inflammation reaches the brain, it creates neuro-inflammation. Neuroinflammation leads to brain dysfunction, cognitive impairment, and an increased vulnerability to neurodegenerative diseases (depression, anxiety, schizophrenia, etc.)

I cut out gluten products a few months ago & i‘m migraine free since then. I started gluten as a test & got a migraine again..

Great video! My response to gluten is headaches and vomiting. I went gluten free 9 years ago before it became so popular. Once I was pregnant 4 1/2 years ago I was told by the prenatal nutritionist that I should consume 5 servings of wheat products a day for a healthy baby. Well, I ended up gaining 60 pounds and after pregnancy developing hashimotos, ankylosing spondylitis and fibromyalgia! I can't prove that it was all because of the gluten but I have a strong feeling that the advice to consume all that bread did not help! Now living paleo/keto and feeling much better!

Personally, I don’t eat a lot of foods with gluten. I didn’t plan to be gluten free on purpose. I’m not sure why I naturally gravitate to gluten free foods but I’m glad.

Oh, blah! No wonder I feel crappy the day after I have something with flour in it. The trouble is that at the church I am a member of everybody seems to be bringing out their breads, cookies, pies, and whatever other baked goods they can come up with that are loaded with sugar and everything else that is not good for the human body. I usually stay away from it as much as possible, and then I hear, "Melanie, you aren't eating anything! Have some!" Yes, be like all of us, get sick and have all kinds of problems, and let us pray for you. I know these folks mean well and really believe they are being kind, but that is what I think as I am attempting to keep a smile on my face and be nice when I refuse their goodies.

I have had stomach issues and bloating for years. All celiac testing has shown inconclusive. So i decided to go gluten free to diagnose myself. I had no idea that the gluten was causing me so much diarrhea, pain, inflammation and bloating so bad that i looked like i was 8 months pregnant. After taking gluten out of my diet i have no more bloating and 80% less inflammation and diarrhea. I wish i would have gone gluten free sooner. It also helps you to lose weight.

Our bodies weren't 'better' at digesting gluten before nor is the problem consuming 'too much' wheat. The problem is the frankenwheat of today. Wheat in the U.S. has been cross bred (GM too?) so many times to maximize production and minimize loss it's flat out garbage wheat. It's of no surprise studies done 50+ years ago show better results. Some people are going to be better than others at handling it sure, on a health level or even genetic.

Absolutely onboard with you here Thomas. I'm so glad I'm on Keto, gluten and carbohydrates just kept me dragging and knocked out all day. I'm no where near a diabetic, yet when I consume carbs, they put me to sleep like a rock. Thumbs up! Shared to FB. My family needs to know about this!

I noticed when I went to the Dominican that I felt great and lost weight despite eating/drinking everything I could. I am into nutrition and body building, so it came off as very confusing. Turns out I had Celiac... There wasn't really any gluten in the foods I ate while on vacation. Been gluten free for several months now, I miss some foods, but I wouldn't give up how I feel for gluten again.

Thank you! I'm allergic to yeast, so when I eat most kinds of bread, I get BAD heartburn. Even flat bread and tortillas don't help. For me, it would be MUCH better to skip a meal than to eat any kind of bread.

Gluten free diet was recently recommended to me by my doctor. She is convinced that exclusion of gluten improves digestion, joints and bone density. I’m definitely going to try in nearest months.

To me sourdough is the correct way to make bread. Because the bacteria in the bread eats/breaks down the gluten. And the taste is delicious without any unhealthy spreads. But today's industrial food companies shorten that preparatory step to crank out a product. It's a half-baked approach, even though it's really half-prepped.

Thanks for this, was diagnosed Coeliac (Gastroscopy) in 2009 after years of sickness, and so many health issues.I thought I was losing the plot BUT it was Gluten!!
