Olive tapenade can be made simply and quickly thanks to the food processor, but if you use a food processor (which is highly recommended), keep in mind a few things:

1. Pulse. Don't purée.
2. Chop half of the parsley by hand.
3. Stir in the olive oil by hand.

Pulse:

roughly chopped parsley

2 cups pitted black olives

1-2 garlic cloves

2 tbsp capers

1 tbsp vinegar

Juice of 1/2 lemon

Zest of 1 lemon

Pinch pepper flakes

Mix with 1/3 cup of olive oil and 1/2-1 cup finely chopped parsley.
