Homemade Blueberry Muffins

1 1/2 cups all-purpose flour
3/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg
milk
1 cup fresh or frozen blueberries

CRUMB TOPPING

1/2 cup white sugar
1/3 cup all- purpose flour
1 1/2 teaspoons ground cinnamon
1/4 cup room temperature butter

Preheat oven to 400°. Place muffin cup liners in muffin cups.

Combine the flour, sugar, salt, and baking powder in a mixing bowl. Place the vegetable oil into a 1 cup measuring cup. Add the egg and enough milk to equal one cup. Mix into the flour mixture. Fold in blueberries. Divide batter between 12 regular muffin cups or six jumbo muffin cups. Sprinkle top of batter with the crumb topping.

Bake for 20 to 25 minutes or until done. Do not over bake. 

TO MAKE A CRUMB TOPPING:

Mix together, sugar, all-purpose flour, and cinnamon. Cut in butter using a fork or your fingers. Sprinkle over batter in muffin cups.

Made your blueberry muffins today and they are marvelous. Doubled the recipe and made 12 large muffins. I left the topping off because we have been on vacation and over indulged last week. Thank you for your kindness. I love your blog. ❤

I think some chopped dried blueberries and some chopped nuts like walnuts or pecans would be good in that topping too. Dried blueberries are available in a lot of grocery stores.

This is a recipe I've been looking to make. I used to make blueberry bran decades ago, but forget the recipe. I only remember it takes all bran cereal and molasses, but I don't remember how much of all that or anything else. I love blueberry muffins, bran or regular

I fix blueberry muffins every Christmas morning. I've never made them from scratch. But I will this year. They look delicious ❤ I love your channel. I am 70 yrs old and have leukemia. I made your blueberry muffins today to take camping for breakfast. They are delicious, soft, moist inside and crunchy sweet on top. I love watching your cooking videos and learning to cook simple recipes is my favorite. I also made the mustard chicken, it was moist and delicious. Your cooking and you and Melissa are wonderful.
